Tomato egg

What do you have for breakfast? Cereal? Sugar? A fry up? Yoghurt? Nothing? My latest breakfast craze revolves around fried tomatoes. Oh they are so yummy! Each day is a new opportunity to try another fried tomato combination. Plus, with my new-ish Tefal Master Chef series fry pan which I bought for only $30 (usually $80), each day is a non stick experience. And by non stick, I mean NON STICK! Tomatoes and non stickness, what else do you need?

I 'invented' this simple recipe myself. One day back in January I was frying some tomatoes when I decided to add egg to it. Wow. Tomato egg was born.


Some important facts:
Fried tomato + egg = tomato egg
Tomato egg = yuminess and fullness until lunch time
And, it is grain and sugar free!


Tomato egg

What you need
  • 1 large tomato or 2 medium tomatoes, chopped into chunks
  • 1 egg
  • Slice of butter (as much as you like)
  • Pepper
  • Cheese (optional)
Optional- you can add any of the following items to 'tomato egg'. Simply chop/slice into small pieces in order to minimie cooking time
  • Silverbeet/spinach
  • Pumpkin
  • Zucchini
  • Mushrooms
  • Bacon/ham/sausage
  • Sundried tomatoes 
  • Basil 
  • Eggplant
  • Onion 

     What you need to do
    1. Preheat the fry pan on the hot stove.
    2. Place butter into the hot dry pan, swirl in the pan to melt.
    3. Add tomatoes and any of the optional ingredients to the pan.
    4. Sprinkle with pepper.
    5. Once the tomatoes have 'wilted' a little, add the egg to the fry pan.
    6. Mix the egg around in the fry pan. The 'tomato egg' will remain slightly runny from all the tomato juice.
    7. Serve with cheese on top.

      Checkup - No grains/sugar diet:
      Three weeks in. I have lost 1.5kg, 1cm from my hips and 1cm from my waist. Interesting, as all that I changed was the consumption of grains and sugar, which only ever happened on the weekends (so not much at all). Everything else stayed the same; eggs and yoghurt for breakfast, full cream milk cocoa, more yoghurt, vegetables/tuna for lunch, more full cream milk cocoas and vegetables/eggs/meat for tea with yoghurt and fruit for dessert. I am also quite sure I have been doing less exercise than usual. So what were the grains and sugar doing to me? I find this quite interesting.


      Oh, I have not yet introduced you to my two friends! How rude of me. I then would like to introduce to you cow 1 and cow 2. Yes, very original names:) They live in a paddock down the road from me and love to eat grass/weeds from my garden and apples.

        1. OMG OMG did you know this is a famous Cantonese dish? Tomato fried eggs :) I've had this dish since i was a little kiddo and it's still one of favourite it's healthy, filling and just totally yummy ;)

          So glad you're feeling better and wow losing weight is great! I've gotta start eating cakes and desserts and maybe I'd be able to lose some too ~

          Haha I did not know this. I have looked it up and all the Cantonese tomato egg dishes look much prettier than mine. They seem to scramble the egg before, then cook tomato, then cook the egg with the tomato. I will try it tomorrow, if I remember:) Thank you for telling me about this!

          I have a strange relationship with omelettes...in which I do not like them. This tomato egg is more of a slop than an omelette. Though today's tomato egg was more chopped up omelette like as the tomatoes were not so juicy:(
